Sub-floors which are made from plywood capable of holding up better to moisture are now primarily used. Doing it piece-by-piece could be time consuming and difficult to do correctly. The best way to go about it is to just lay down the plywood right over the old floor. This way you will be able to save time and effort, plus you will not have to replace it sooner.
